It's supposed to snow again in Memphis on Tuesday but this is perfect for any weather! Add less noodles for low-carb. Add more veggies for a little more healthy!

Flank Steak with Chimichurri over Cauliflower Mash
This is one of my favorite recipes ever and it happens to be low-carb, super healthy, but super hearty and filling. I could eat this every day - and the best part? The cauliflower and Chimichurri are quick, easy, and can be made a day ahead so you'll only have to grill the steak the night-of! Just let Chimichurri come to room temp and heat mash in the microwave before serving!
