These pancakes are super healthy and most importantly, the flavor is beyond. So quick to make, they can be whipped up before heading out the door in the morning. Better yet, they can also be made ahead, refrigerated, and heated for a few minutes in the microwave - make a double batch and have them several days in a row. You won’t get sick of them, I assure you! Creamy, nutty, and egg-y, with sweet little date surprises in every bite. Complete perfection!
Serving size - 6 to 7 pancakes
Cooking spray
1 large ripe banana - mashed until smooth
2 large eggs
1/2 teaspoon vanilla
1/4 cup oat flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
4 pitted dates - finely chopped
2 tablespoons chopped walnuts
Heat a nonstick pan coated in cooking spray over medium heat. To a large bowl, add the mashed banana, eggs, vanilla, oat flour, baking powder, and salt. Whisk together until smooth. Stir in the dates and walnuts. Using a 1/4 measuring cup, spoon the pancakes on the hot pan. Flip when bubbling and cook one to two more minutes or until through. Serve with maple syrup.
