A simple dish for the spice lover. I’m obsessed with effortless yet elegant olive oil based pasta dishes and because of the heat on this one, it takes the cake. It’s truly one of my favorite pastas to cook at home and if you have 10 minutes to spare, you can make it! With very few (mostly pantry) ingredients needed, keep these on hand and you’ll have this one on rotation!
Kosher salt
1 pound spaghetti
1/2 cup good quality extra virgin olive oil
4 garlic cloves - sliced thin
3 to 4 Calabrian chilies in oil - sliced
1 cup freshly grated Parmesan cheese, plus more for garnish
Trader Joe’s Chili Onion Crunch (optional)
Basil
Bring a large pot of heavily salted water to a boil. Boil spaghetti until al dente. While spaghetti is boiling, heat olive oil in a large sauté pan over low heat and cook garlic and Calabrian chilies for about 1 minute or until fragrant - be careful not to burn. Take off the heat. When spaghetti is finished cooking, add directly into the olive oil mixture with the Parmesan and about 1/4 cup of pasta water. Toss together until combined and creamy. Add more pasta water if it gets dry. Serve topped with Chili Onion Crunch and basil leaves.
