Bourbon Brown Sugar Grilled Pineapple with Honey Lime Creme Fraiche

Grilled pineapple is the best summer staple. I always forget how much I love it until I’m at a barbecue and someone sets a plate of it in front of me and right away, I can’t stop eating it. This is an elegant take on the recipe with a little flavored creme fraiche and fresh herb! 

1 whole pineapple - sliced into 1/2 inch rounds, skin removed (you should get about 8 to 10 round slices) 

1 1/2 tablespoons bourbon

Kosher salt 

1/2 cup brown sugar 

1 (8 ounce) container creme fraiche

2 tablespoons honey 

1 lime - juiced 

Mint or basil sprigs 

Heat a grill or grill pan over medium high heat. Place pineapple slices on a baking sheet or large rimmed plate and drizzle bourbon evenly over the top of each. Lightly sprinkle salt and brown sugar evenly on both sides of each slice. When grill is hot, grill for about 2 to 3 minutes on each side or until caramelized and softened. Make the creme by whisking together the creme fraiche, honey, and lime juice. Plate the pineapple and drizzle the creme over the top, serve any extra on the side. Garnish with mint and/or basil.
